Easy Cake, No Mess : Healthy no bake cookie powerballs

For now, tuck into this super easy recipe. These healthy raw cookies will change the way you think about raw food, and indeed raw cookies. They’re marvellous, and thanks to the dates, both healthy and sweet.
It’s worth it to buy the highest quality ingredients that you can find, because, you’re going to be eating a lot of these now; they’re rather addictive. They keep for ages in the fridge – and thanks to the maca powder they will give you extra energy from a natural source without making your blood sugar spike.
If you’re new to raw food – you may just find that you’re making these in double batches regularly…
New to cacao? Raw cacao is very different from cocoa powder; it’s not just a case of the way they’re spelled – it’s a much stronger taste. So, be careful when adding it to any recipe, you’ll want to taste the results to make sure it’s what you expect!
15 cookie balls (more or less, depending on size)
1½ tsp Raw maca powder
1 tbsp Ground cinnamon (organic, if possible)
1 tbsp Raw Cacao powder
¼ cup Dark chocolate (organic, if possible)
8-10 each Medjol dates, soft, pits removed
50 g (1¾ oz) Ground almonds
30 g (1 oz) Organic goji berries
1 tsp Vanilla extract (organic if possible)
Simply add all the ingredients to your food processor and whiz until small pebbles begin to form. Roll into small balls, and refrigerate. It’s that simple.
If you’d like to fancy up their presentation a little – roll some in sesame seeds, some in cacao powder and push a goji berry into the middle of a few. They’ll look like fancy chocolates.
Guests go from trepidation, to full on love in one bite.
