This cake has a fabulous twist of delicious ginger. And, because it uses carrot juice, you get a lot more flavour than you do with the simply grated carrot. Plus that fabulous orange colour shines through.

If you’ve got a juicer, make your own carrot juice, as the taste (and the vitamin content) is so much stronger. If not, you can find carrot juice in many supermarkets. And you might think about getting a juicer, they really are ace.

Ingredients

Makes: 1 loaf cake
2 med Eggs
240 ml (8 fl oz) Carrot juice
75 ml (1/3 cup) Vegetable oil
2 tsp Vanilla
175 g (6 oz) Flour (why not combine half whole wheat and half plain flour)
150 g (5 oz) Sugar
2 tsp Baking powder
½ tsp Salt
2 cm (1”) Fresh ginger, grated

Preparation

Preheat your oven to 180ºC (350ºF, Gas mark 4). Grease and line a loaf tin.

In a medium mixing bowl, whisk together the eggs, oil, vanilla and carrot juice. Add in the remaining ingredients and whisk until combined, but do not over mix your batter. (It should be fairly smooth, but don’t worry about the odd lump or two.)

Pour this into your loaf tin and bake for about 45 minutes until a toothpick inserted into the centre comes out clean.
